I'm considering buying a second printer, raspberry pi's are hard to get, can one pi support two printers?

One pi (assuming 3B+ or newer can support two printers, but you'll need to setup the additional instance of OctoPrint manually. The easiest approach is to use the octoprint_deploy script.
