I am trying to find a USB based filament sensor to no avail and my google-fu is failing me.

Does such a creature exist? I'm running Octoprint 1.8.6 on debian 11 x86-64

Help me Obi-wan you're my only hope.

While not exactly what you asked for, an Adafruit FT232H Breakout Board will get you the USB-based portion and then you can attach almost any filament sensor to that.
