Recently, tried to start a new Pi image with the latest.
It appears that the 2.0.0 imager has changed. Can't select the Octoprint image I need.
Please advise.
I am a glutton for punishment so I just tried the 2.0.0 version and I was able to select the OctoPi images and the image booted successfully.

I don't know if your issue is timing or a bad install so please try again.

Something must be blocked for the original poster, as there are no images showing up in the Select OS field, what device was chosen?
It is loading for me fine.

Works fine here too.
Maybe the OP has no Internet connection with the setup.

I had that with an older version of the Imager.
I remove it and reinstalled it, rebooted my pc.
Problem solved.

For some strange reason my internet provider started blocking a few things.
Made a few adjustments, working fine now.
