I own an Elegoo Neptune 3 Pro that has a really nice detachable touchscreen. However, when using Octoprint, even when printing, the screen doesn't change and it doesn't show the progress or anything. Is there any plugins that could allow octoprint to show the progress on the printer's local display, or show information about it on the screen.
Any help would be greatly appreciated!
Only if that screen will show when M117 or M118 messages are sent to the printer. You can try from the terminal tab of OctoPrint and see if anything shows.
M117 This is a M117 message
M118 This is a M118 message

Nope, Unfortunately none of them work. M117, M118, M73. The terminal says ok, but nothing changes on my screen. But the thing is, my screen is a lcd touch screen, so it's not like the mk3 with 4 lines of text

Maybe it's different Gcode lines?
No, it's just how those screens work. They're technically not just screens, but acting as their own host software, running their own firmware. You might find a firm of Marlin somewhere that may make that screen work better with OctoPrint, I just don't know if one exists since I didn't have that model printer.
