When a print is initiated, isn't all the gcode uploaded to the Pi?
If so, it should be possible to shut off the computer and let the Pi handle and finish the printing.
Am I missing something?

When you upload the file to the Pi, then: Yes.
BTW: You can also initiate a print when the gcode file is stored on the printer's SD card. But usually, the print data come from the Pi.
Yes. I do that quite often. The Pi with the printer is a self contained "ecosystem".
Not really. Maybe a possibility to have access to OctoPrint besides the web GUI on the PC, like on a smartphone. E.g. in case you have to stop the print for whatever reasons.
Like for example OctoPrint-OctoPod
Thanks for answering. I run Windows 11 and upload my .gcode to the 'watched' folder. It is recognized by the Pi and confirmed in Octoprint. I switched off my screens but let the computer run with Octoprint open while the printer was printing (computer sleep set to 'never'). After a while the printer stopped. I turned on the computer and looked at Octoprint. A red sign told me the communication was lost.
Why?
