Is it ok to weekly run apt-get update && apt-get upgrade on Octopi to keep the OS up to date?
Yes, that will be OK.

I've been doing that for the 4-5 years I've been running octoprint (or any pi). It ensures you have the latest packages, security updates etc.
I've been doing it for the last year, but wanted to make sure it doesn't mess with Octopring.
