My printer only has a power port, usb stick slot and ethernet port. I was wondering if it is possible to connect my pi to the printer via Ethernet, and off so how would I do it.

If you want a more detailed answer, please at the very least tell us what printer it is.
The printer is a FlashForge adventurer 3
In that case: probably not, but I don't know. FlashForge is not very forthcoming with details on their software. It could be that the printer accepts gcode commands over a telnet connection. That is not directly supported by OctoPrint, but it would probably be possible to set up a virtual serial port. @foosel is working on a new comm layer that should make it easier going forward to support alternative connections like that.
