Try to power on your printer before you power on your pi

If that doesn't work log into your pi via ssh then disconnect your printer, connect it again, enter dmesg | tail -n 20 and post the output here.

If you need help with ssh

powering on printer first did the same thing

i recently changed my skr mini e3 board for the creality 4.2.7 which changed the cable from mini usb to micro usb. I grabbed a random cable that i had around the house, could this be the issue?

Yep that could be the issue. Your pi isn't detecting the printer at all so it's probably a cable without data lines just for charging or powering devices.

I ordered a new cable to arrive tomorrow, So I'll swap it out and try that.

Just to clear up - so this was actually nothing to do with the update to 1.6.1, as you changed the printer mainboard & USB cable at the same time?
