Can Octoprint read an external temperature sensor? I'd like to the know the chamber temperature of my enclosed printer. Maybe a Maxim I2C part?

The enclosure plugin can read some sensors, give that a go.

my tasmota plugin can as well from devices that have been flashed with tasmota and a sensor is attached.

My filaweigher project also has a temperature sensor on it in addition to the weight of the spool.
If the software can handle it Maxim (Dallas) DS18B20 is an excellent temperature sensor and they can be bought as a nice stainless steel probe with integral connecting lead in a range of lead lengths. They use a 1-wire bus so not I2C. Some Tasmota's can use this sensor.
