What is the problem?
Just a question: Can I, and if so, how can I upgrade to a newer version of Octopi/Octoprint on a new sd card with keeping (transferring) my current settings incl. plug-ins to the new SD card?
Does perhaps a tutorial for this scenario already exist?

You can do a backup and get the data back during the initialising process of OctoPrint.
You find the backup feature at
OctoPrint Settings -> OctoPrint -> Backup & Restore
Just make sure to download the backup after you create it...

I here what you (both) saying.
To make sure I understand the procedure.
- I have he current sd card, call it card-A. I will make a backup of the data and download the zip file to my linux box.
- I create a new sd card with the latest version of Octopi with the pi-imager (either 'stable' or 'new cam stack'). Call this sd card "card-B"
- after completion creating the new sd card I insert "card-B" into rPi.
- Connect to "octopi.local"
- login to octoprint and download the backup-zip file to the pi. How does it know my credentials from "Card-A"?
That's what I have figured out how the process could look like.
Am I right with my description or do I miss some small, but important details?

You are correct up to 5. When you 'login' to OctoPrint will automatically run the Startup Wizard where you have the option to use the backup. You then give it your backup and it gets all info it needs from that, including the plugins. The backup can even load up the upload directory and timelapses as well if you include them.
